Juniper Berries are the fruit of an evergreen shrub (Juniperus communis) which grows wild throughout most of the northern hemisphere. It takes two years for the berries to ripen to a dark blue at which time they are ready to pick. The further south the juniper grows, the more pungent its berries. These Juniper Berries were gathered along Croatia's Dalmatian coast, where they add their fragrance to that of wild rosemary, lavender, growing blue berry and thyme. Use them slightly crushed, alone or with their companion herbs, in stuffings, growing blue berry and marinades for pork, venison, quail, Cornish game hen, growing blue berry and other fowl or game. Crush them with salt growing blue berry and garlic for use in pates.
